I just completed the mission and I was wondering what other people did with him because as soon as I saw him blueprints for deerskin pants & boots popped up, I personally let him live

You can't shoot him actually.  You can try, but you won't hit anything.

When I shot him several times they hit him but didn’t do any thing. With there were fancy albino dear pants though with some sort buff over regular ones.

Magic deer hide used to craft the BFG, or Buck Firing Gun.  It's a portable trebuchet that launches live bucks as ammunition.  It's very useful at accomplishing absolutely nothing.

The French used to have a version used to launch cows at stuffy English Knnnnnnigts.

It's not possible to kill the ghost stag. I caught the stag in a pathfinding loop and shot at it many times with both rifle and revolver.

@Ice Hole, has probably found a way to craft an Ecto Containment Unit using Battery.

I didn't even try shooting him. It was such an amazingly beautiful sight it never crossed my mind
