Expanded stats you can either peak in a toggle, or have always on.

a page that shows expanded stats that you can push to see or toggle on/off. 

It can show how much you're carrying, exact temperature + clothing, calories, other information about your stats, maybe even time of day?

Would be cool.

There is already a page similar to this. Open your radial menu and click the button in the center, or navigate to the leftmost tab in your inventory. 
It shows a more detailed view of your stats, current temp, and feels-like temp. 
It also has any afflictions current active (both negative and positive) and your carrying capacity can be viewed at the top

Additionally, pressing Tab on PC (by default) adds an overlay that shows additional information, like time of day, and scent amount.
If you play on another platform, check the control scheme when out of a game to see what button to press.
(This Tab action only works when out of your inventory)
