I was thinking of some ideas to add more content for a normal survival playthrough. I figured hunting was only used for resource gathering and self defense against predators. Then I thought, what if there were some rare animals hidden across great bear. Perhaps a deer with rather large antlers, or a bear with a lighter shade of brown fur (grizzly bear). There ai behavior would be the same as a normal animal, but they only spawn in certain locations. If you manage to successfully hunt/catch this animal, you'll get a stamp in your journal, maybe even an achievement if you manage to hunt every rare animal across great bear. When the customizable safehouse becomes available, maybe you can harvest a trophy item from the animal to display in your safehouse.

You know it would be cool if you could hunt and harvest the Ghost Deer from episode 3 of Wintermute.  As long as the hide was still white anyway.

Oh  yes, this would be awesome. Let the white deer, the old bear and maybe a special moose and/or a deadly wolf spawn somewhere random in each run, perhaps roaming about a couple of regions. Then add a goal like Master Hunter if You get them all in one run.
