It might be physically impossible (I'm no farmer) but it would be a good long term goal to make a small greenhouse or indoor planter and grow potatos and carrots. The crops would have realistic grow times and need watering in regular intervals. This might go against the original vision of a quiet apocalypse but at the very least it would make a cool mod.
