disappearing wolf flesh

On the Mystery Lake map, nearing sunset, next to a fire, I was harvesting a wolf corpse... after I successfully harvested almost 5kg of meat from it, none showed up in my inventory. A minute later the corpse disappeared. I thought the corpse was farther away from disintegrating than even say 10%, but if it wasn't shouldn't I still have gotten some meat from it? The task was fully completed, and the guts and hide show up, but no meat.
