So I've got 6 "Old Man's Beard Wound Dressing" in my inventory. When I bring up the First Aid screen, however, it only shows that I have 2.

All the other items show up correctly.

Also, while you're in there, I sprained my ankle, and had three cups of Rose Hip Tea. I chose it from the first aid pack, and they were all used, even though it only counted 100 calories while I drank it.
