I wonder if our current game saves/progression will carry over? or will we be starting from scratch in sandbox?

While we are an alpha game in Early Access, it's always our goal for save games to carry over between updates. And though we can't promise there won't be any issues, we have a good track record in this area.

Thanks. Will this game be updated on both PC and Xbox simultaneously?

The process is different, in that we go through a certification process for Microsoft that doesn't take place on Steam, but historically they line up nicely.

I can attest to this. In my whole time playing I've only ever lost one save

I actually still have a save file that I started way back in February 2015.
